Dry roast oats until aromatic, cool, grind into fine flour for batter.
Mix oats flour, semolina, yogurt, salt, water, let it rest.
Sauté carrots, green chilies, mustard seeds, curry leaves for added flavor.
Add sautéed veggies, baking soda, coriander to batter, mix well.
Pour batter into greased idli molds, steam for 12-15 minutes.
Let idlis cool slightly, gently remove using spoon or knife.
Pair with coconut chutney or sambar for a delicious, healthy meal.
