Prepare the dough by mixing two cups of all purpose flour with eggs, pinch of salt and a little water and knead it to form a smooth dough and let it rest for 30 minutes.
Now make the filling by chopping mushrooms, garlic and onion and then saute it in butter. Then mix this in the grated cheese of your choice.
Then roll the dough into the thin sheets using a rolling pin or pasta machine, whatever is available.
Now place a spoonful of filling of the mushroom-cheese mix on one sheet, cover it with another, gently press and cut into ravioli shapes.
Gently drop the ravioli into salted boiling water and cook for two to three minutes until it starts to float.
Prepare the sauce, saute butter, garlic and herbs then add a splash of cream or sprinkle of parmesan for richness and creaminess.
Your tasty mushroom cheese ravioli is ready, toss it in the sauce, garnish with extra cheese and herbs. Serve and enjoy.
