Peel, pit, and finely chop the peaches. Mash slightly and mix with lemon juice and 2 tbsp sugar. Let sit for 15–20 minutes.
In a blender, combine peaches (reserve some chunks), milk, cream, remaining sugar, vanilla, and salt. Blend until smooth.
Pour the mix into a bowl, cover, and refrigerate for at least 2–3 hours (or overnight) for better texture.
Pour into an ice cream maker and churn as per the manufacturer’s instructions (usually 20–25 minutes).
In the last 5 minutes of churning, add the reserved peach chunks for extra texture.
Transfer to an airtight container and freeze for 3–4 hours until it firms up.
Scoop into bowls or cones and enjoy your homemade peach delight.
