It is perfect for Sawan fasting, creamy, refreshing and full of mango flavour.
½ cup sabudana (soaked), 2 cups full-fat milk, ½ cup mango puree, 2 tbsp sugar (or as per taste), 2-3 cardamom pods and Chopped nuts (optional).
Rinse sabudana & soak for 3–4 hours. They should become soft & fluffy. Drain excess water before cooking.
Boil milk in a pan. Add soaked sabudana & stir. Let it simmer till pearls turn translucent.
Mix in cardamom powder & sugar. Stir well and cook until it thickens. Turn off heat & let it cool slightly.
Once the kheer is warm (not hot), fold in fresh mango puree. Mix gently to avoid curdling.
Garnish with chopped nuts or mango cubes. Serve chilled or slightly warm. Perfect as a vrat dessert during Sawan!
