Take a bowl, add 500 grams of chicken with yogurt and then add ginger-garlic paste, spices like turmeric, red chilli powder, garam masala, salt and pepper.
Then take a heavy pan heat oil or ghee in it then add whole spices like bay leaf, cinnamon & cloves. Then sauté chopped onions in the same pan.
Now toss in fresh ginger-garlic paste till the raw smell disappears from it.
Then add tomatoes, red-chilli powder, coriander powder, and a pinch of kasuri methi to it, cook it till the oil separates from the mix.
Gradually add the marinated chicken and cook it well on the low flame till it becomes juicy and tender.
For the signature dhaba touch and smokiness, heat charcoal properly, place it in a small bowl inside the pan, add ghee on it, and instantly cover it for two to three minutes. You will get a perfect smoky flavor.
Your dhaba-style chicken is ready at home. Garnish it with coriander and serve hot with garlic naan or rice.
